Have you ever had one of those days when you wake up and everything just does not feel right? In the last week, I have been feeling out of place. It seems that there are just so much to do and I am just try to find the balance for everything. I feel tiredness and at the same time, questioning my abilities. How I hate the feeling of self-doubt. What do you do when this happens?

One could never really tire of kimchi. It is one of those little dishes that the more you eat, you more you want to eat it. Last week, Mister made a lot of kimchi and due to its fiery nature; many friends were reluctant to set their tongues and tummies on fire.

This recipe depends on the extent of your chilli tolerance. Please find the recipe for the gyoza dough here. It is so easy. There is a high tolerance for mistakes. Too wet, add more flour. Too dry, slowly add water into the dough. Please remember to work the the dough before making a decision for adding either more flour or water. Your hands are the best tool. I will advise against using any kitchen gadgets. The dough is ready when it feels soft and it is not sticky.

World cup fever is definitely in the air. This time in 2006, we were in Germany and loved every minute of it. The passion for the sport is so exhilarating. Everyone talked about football (not soccer). It is FOOTBALL. I remembered the joy and OMG feeling when Socceroos thumped Japan in the first round. And we were in the Munich stadium when we lost to Brazil. And also the moments of that we were in a bar in Italy when we watched Socceroos drew with Croatia 2-2 to go into the next round, facing Italy. And how our dream ended the 2006 world cup dream when we lost to Italy. I love the world cup. I love football. It brings all sorts of people together, just like food. I don't mind the late nights and early mornings. The World Cup only happens once every 4 years. Time to start saving for 2014. We want to be where the action is.

The Chinese has been making and eating noodles since 2000BC. Like rice, it is a part of the staple diet. It is always part of many Chinese festivals like Chinese New Year and also a must have dish on birthdays. I remember that my grandma would make us a bowl of mee sua. We aren’t allowed to ‘cut’ the noodles while eating it as it signifies longevity.

We are spoilt in Melbourne with great food and produce. But there are just some dishes that rarely hit the right spot. One of these dishes is Ban Mian. It is a type of egg noodle that is very popular in both Malaysia and Singapore. Some use anchovies as the base soup and some places have different toppings. I find the broth served here either very bland and the noodles not well made. Or maybe I am just not looking the right places.

We were away in Hobart and so I missed out on that series but I heard that almost everyone had tears! I guess that is the part of being on reality TV. They need tears and stories to hit top ratings. I am sure they succeeded. Even though many will think that contestants should not cry on TV but if it is something touching as childhood memories, then I am sure tears will flow irregardless. It is just that TV makes use of the opportunity to capture it as this is what most audience are after. They love the tears and it is something to bitch about.

I had a conversation with a meat lover just this weekend and was asked why the hell do I want to do this meatless day once a week. Both of us will usually eat quite a fair bit over the weekend and a meatless day is always welcomed. I try to make it the healthier option. And the other reason is to learn about flavour. It isn't easy just whipping up a vegetarian meal without the use of animals fats. And it is nonsense to think that vegetarian food is boring and tasteless. In actual fact, they are quite the opposite when done properly and well.

Many times, I will just take the meat out of the recipe but good and delicious vegetarian does require more thinking and more flavour combinations. So this week, I thought I had to try a little harder. I bought fresh organic tempeh from the farmers market and had in my mind to make use of bold spices to kick some life into this piece of tempeh.

It is home alone with Tekkie. Mister is still travelling around in Tasmania till the end of the week so I will need to prepare meals for myself only. There was nothing very much in the refrigerator and I wanted to wait for Mister to be back here before going through all the Tasmanian goodies. When I posted the question of what to cook on twitter, there were many suggestions like veal schnitzel, scallopini, Japanese curry and even instant noodles!

I was going to make veal schnitzel but changed my mind once I got home. I need packed lunch and dinner for one other night so decided to make Japanese veal curry instead. There are some missing ingredients like onions and fresh ginger. I missed out the onions and used ginger powder instead. Please use fresh ginger if you can and also add onions for more flavour.

First of all, I will like to reveal our official International Incident Party banner. Many thanks again to Trix and Poppy Trix for creating this lovely logo. And many thanks to Natasha & Joanne for their contribution as well. And so let the party begin!

I had so many ideas but being a poor technician, I could not figure out a way to execute it. Yet. There was beer or stout pies that I wanted to make. I thought of the humble Shepard pie with potato and rosemary pizza topping. Fruit pies with cheese toppings. Upside down pies. Too many to name them all scribbled in my little black moleskin and hopefully be able to make them all one day. Oh yes, there was the bone marrow pie! I must make that soon. Even thinking about it makes me salivated.

Totally inspired after our brunch at Miss Jackson, I decided that I will make corn fritters as part of this week's challenge. I will consider corn as a very humble and versatile dish. It can add colour, flavour and texture to a dish. It can be eaten simply by itself, roasted and topped with a nob of butter and a sprinkling of salt. I mean who doesn't love corn-on-cob? And also not forgetting the sweet corn dessert back in Asia. Can you think of any other corn delights?

The 2010 April Daring Cooks challenge was hosted by Wolf of Wolf’s Den. She chose to challenge Daring Cooks to make Brunswick Stew. Wolf chose recipes for her challenge from The Lee Bros. Southern Cookbook by Matt Lee and Ted Lee, and from the Callaway, Virginia Ruritan Club.

The Brunswick stew is a traditional stew from Southeastern America. It was quite timely as the cold weather has just started to kick in downunder. I had friends coming over for a dinner and it seems like a good idea to have as many willing guinea pigs as possible. But then again, it was a little stressful as there was not much room for error. So I decided to stick as closely to the recipe as possible. Fingers cross or there will be no dinner but instead hungry friends that may throw peanuts at me.

The weather has definitely turned. I needed to put on my winter coat this morning when I headed to the gym. The other tell tale sign is that I am hungry almost every single hour and all I like to do is to hide under the doona and watch Lifestyle food channel all day.

Many Thai soups and curries are perfect for the cold weather. It warms our tummy and the I love the warming aroma of the herbs that fills the kitchen and the house. I turned to a old Thai cookbook - Thai Cooking by Judy Bastyra & Becky Johnson. I can't remember where I picked this up but it must have been on sale! I was a little suspicious if the recipe was going to work. It says curry but it seems more like a spicy soup to me. Anyway, I adapted the recipe and added my own take on it.

I made this awhile ago to kick start the healthy challenge with Tekkie. It has been going well. But as the weather gets colder, it is getting harder and have changed the routine from mornings to evenings instead. I hope he has lost some weight and I definitely feel better and enjoying my RPM classes a lot more. There is a lot more fruits in our diet. We are still trying to find the right balance in our lives. Too much temptations and distractions!
