Blood plum and honey soufflé

I thought I was prepared this week. I even bookmarked a couple of recipes. But as usual, I always give myself too much to do but this time, I do have a good excuse. It is New Year celebrations and I do have a very good friend in town so cooking has been placed on the back burner. Baking is definitely not one of my fortes. So a little tired from all the New Year celebration, I crazily decided to choose the souffle over the pudding for this week’s challenge. I had most of the ingredients except for the icing sugar required for dusting.

Anyway it was a lovely Sunday morning and there was always time for a sweet soufflé before we headed out for lunch. It had been a long time since I made my last soufflé and I was a little apprehensive. This recipe has few ingredients and I did adapt it a little as usual. I found this cookbook, Women’s Weekly – Old Fashioned Favourites, at the back of the book shelf. So many yummy baking delights and I am so glad I found it.

What we did and ate on Cup Day

I wrote this post while we were flying across the dessert towards Darwin to make our transit to Bali. No entertainment on Jetstar was not a nice feeling. I could either sleep in a very awkward sitting position or read the same National geographic magazine from back to front and back for the next 5 hours. So this is just one of the entertainment I found for myself while I hear Mister snoring away next to me. :|

Cup day was a mad rush for both myself and Mister. We had so much to do before we left for Bali. After only 4 hours of sleep, I was a little grumpy. We had to pack the house and getting it ready for our kitchen and bathroom renovation, iron all the clothes that have been left neglected and also pack for our Bali trip. We did not get too much groceries over the weekend and so the fridge was quite empty.

I have not been feeling too well lately. As much as I love Spring, I hate it as well. It brings pollens of all sorts. My head weighs a ton and I feel like a bloated goldfish. Despite the pain and blurry vision, a sick girl needs to eat. The last time I used my cute little cast iron pan was to create Baked eggs with black pudding. I had leftover double smoked bacon, Parmesan cheese and asparagus from the weekend. Plus, plenty of eggs. So in my fluffy state of mind, I decided to make a frittata.

I love eggs. Scrambled, sunnyside up, poached, boiled, steamed, baked. I love them all. It is a definite must have on my breakfast menu on the weekends.
