Chipotle roasted chicken wings

What a lovely weekend and I wish I was in a better state to enjoy it. I felt really lethargic and totally unmotivated. I wanted to cook something really fuss free but tasty. My initial plan leading to the weekend was to slow roast a hogget and make a pie or something. Alas those ambitious ideas were thrown out of the window and replaced by this humble and simple oven roasted chicken wings.

What do you mean pulled chicken? What is pulled meat? Basically pulled meat means slow cooking protein that can shredded by hand after. Well, that is what I think anyway. Do you agree? What do you think pulled chicken or meat is?

Cooking the Books – Momofuku Brick Chicken

In March 2010, a group of us came together and cooked a #momofukurage dinner. Rage because we felt “cheated” that all tickets to the David Chang’s dinner during the Melbourne Food and Wine festival (2010) was sold out within minutes of release. Are you serious? Are you freaking serious? The twitterverse was in rage and so we decided to have a Momofuku pot luck dinner party where we each picked a dish from the cookbook and cook it.

Lemon syrup roasted Chicken

We are mid way through Spring and I still have an abundance of lemons from our humble tree. I need to start preserving it soon before it all disappear another season. And they do make great Christmas gifts. I can’t believe how time flew this year. 2 more months to festive and crazy season. Can you believe that? I have so much that I still need to do this year. Please make time stop!

Curry chicken

This is my version of curry chicken. The weather was prefect when I made this. We are in Spring but somehow it still felt wintery at times. So before it gets too warm, I need to squeeze in a couple more curries. Curries is one of those things that can be quite personal. Everyone has a personal favourite recipe. I prefer mine with a little more spice kick. Kickback on the chillies if required or kick it up if you are more of a chilli freak than we are!

Daring Cooks July 2010 – Roast chicken with chestnut butter

When I made this dish, chestnuts were still in abundance. A friend mentioned that it took a lot of patience to prepare chestnuts. But she also forgets that it is very enjoyable to eat while peeling chestnuts. Chestnut season is really short so the little bit of hardwork is worth the effort.

International Pizza Pie Incident Party – Serpent pie with pizza sauce

First of all, I will like to reveal our official International Incident Party banner. Many thanks again to Trix and Poppy Trix for creating this lovely logo. And many thanks to Natasha & Joanne for their contribution as well. And so let the party begin!

I had so many ideas but being a poor technician, I could not figure out a way to execute it. Yet. There was beer or stout pies that I wanted to make. I thought of the humble Shepard pie with potato and rosemary pizza topping. Fruit pies with cheese toppings. Upside down pies. Too many to name them all scribbled in my little black moleskin and hopefully be able to make them all one day. Oh yes, there was the bone marrow pie! I must make that soon. Even thinking about it makes me salivated.

When I was younger, my parents will drop me off at Grandma’s before they head to work everyday. My parents would then be back for nice but simple home-cooked dinner prepared by Grandma before we heading home. And during special occasions or festive seasons, I remember how she liked to wear the kebaya, gold jewelleries & tie her hair back in a nice wavey bun. I can still remember certain dishes that she used to cook for us. They were all so delicious. It is a pity that no one in the family at that time were interested in aquiring those culinary skills and recipes.
