Pineapple tarts

Pineapple is translated as ‘Ong Lai’ in Hokkien. Direct translation means prosperity come. And what colour is the flesh of the pineapple? It’s yellow which is a close colour to gold especially once the pineapple jam is cooked. Gold means wealth and prosperity as well. For me, it just starts damn bloody good. Pineapple tarts can be eaten in one mouthful. And once a year, I indulge to having as many as I can!

Oreos cookies and cream mini cheesecake

Remember this peanut butter oreo cupcakes with oreo and peanut butter frosting that I made awhile ago? It was such a big hit amongst the readers and also at the fund raiser for RSPCA. That was awhile ago and I wanted to do something with oreos again. So I went for Oreos and cream cheese combination.

Cookbook Challenge w15 (Muffins) – What muffin are you?

Baking is not one of my forte. And even when I do follow a recipe exactly, the end product is usually still not up to scratch. So this week, I thought I will stick to a no fuss muffin recipe. I found a berry muffin recipe in Women’s Weekly, Old fashioned Favourites. It looked farily simple and with very little ingredients and only 3 steps!. Sounds like a fool proof recipe.

And as always, I decided to change the recipe. A few days before muffin making day, I posted a random question on my facebook fan page asking Mars or Snickers. Most preferred Snickers and I do too. The caramel in Mars makes it heavier and way too sweet for my palate. I had a couple of 18g Snicker and Mars bar so I would use this instead of berries in the muffin recipe.

Mandarin orange cupcake with love

I received a $10 gift voucher from Coles in the mail from Nuffnang and amongst other goodies! One of the challenge was to spend the $10 in a creative, interesting or fun way. Since I have never ever baked cupcakes before, I thought it will be funny and pray that it tured out to be a good first attempt.
