What does bacon & maple syrup have in common?

It is a love & hate relationship with Sundays. I love it because it is usually a day of cooking and eating and cooking and eating :) And I hate it because it includes house cleaning and back to work the next day :( My small kitchen is the favourite place in the house. I love it. I can stand all day, cook, wash up and then go on to the next thing.

It is no different this Sunday. The day started with advocado milk which I drank while prepping for lunch. I love pancakes and do not consume enough of it. And it is such a happy food. It always make me smile.

Ingredient:

  • 2 scrambled eggs
  • 2 crispy bacon rashers
  • Maple syrup
  • Olive oil
  • Butter

Pancake – makes 4 -6 depending on size of each pancake

  • 1/2 cup self-raising flour
  • 1/2 tbsp castor sugar
  • A pinch of salt
  • 175ml buttermilk
  • 1 egg

Whisk pancake mixture

Method:

  1. Sift the flour and add the rest of the ingredients
  2. Whisk until it forms a smooth mixture
  3. Heat the pan with a small amount of olive oil and small piece of butter
  4. Pour pancake mixture (1/2 ladle) and leave it for about 2 minutes on each side

It was fun putting all the elements together. I had the scrambled eggs in one pan and the bacon in another. Plus I had to remember to flip the pancake as well! I probably looked hilarious in the kitchen trying to juggle different pans and timing. It finally all came together and topped with a generous squirt of maple syrup. I served it with a cup of chilled avocado milk.

Simple. A little naughty. And a thumbs up from Mister and thanks for being patient :)

Lovely breakfast. It’s a great breakfast for Sundays. I like it with bacon too probably incorporated into the batter. But I also like it sweet. But then again I also like it both. :)

I read a blog recently about that actually. That will be great. Crunchy bacon pancake drizzled with maple syrup. :)

how could you do any better than pancakes and bacon? Although I am a little partial to freshly squeezed lemon juice and a dash of sugar, tangy and sweet.

I could do fried chicken like the Americans! Hmm… I’ve not tried lemon juice and sugar before. Might give it a go!

Hmmm, the reason why my other half did that was that the rasher bacon was really overfried and he didn't like the taste of "dry" bacon. I guessed he really liked it because I saw him drown all his bacon in maple syrup throughout his meal.

The cinnamon sausages had a touch of the maple syrup about them and were absolutely divine. We put our pancetta into the egg mixture too…

A favorite of mine is fried chicken on top of waffles, they have restaurants here that specialize in just that, chicken and waffles.. so good!!! The savory crispy chicken, with the sweet maple syrup and fluffy waffle… bliss!!

It's funny because I really think that bacon has the ability to compliment a lot of flavors you would never think it would go with. I think of the gourmet bacon chocolate bars and the very recently released (and extremely exclusive) bacon beer. And also, avocado milk? I haven't heard of that before and I'm a big lover of avocados.
