Meatless Day Challenge #4 – Tofu salad with peanut sauce

It has been a busy and productive week. Beach, wineries, cooking challenges and looking for a new washer/dryer. The other exciting thing is that I start my new job this week. Gone are the days where I can spend a lot of time on blogging. It is time that I do some serious award winning projects. That aside, I will still continue with the challenges. I can find time somehow.

I made some peanut sauce for my first ever Daring Cooks Challenge – Chicken Satay and so decided to use the same sauce the next day for this week’s Meatless Day. Very little cooking is required. I bought fresh deep fried tofu from Footscray market and the rest are just whatever vegetables that tickles your fancy. To make the tofu yourself, you will need to get the firm tofu, coat it with seasoned flour and deep fry or shallow fry it till it is golden brown.

Ingredients:

  • 4 pieces of fried tofu, sliced thinly
  • 4 cucumbers
  • 2 sweet corn
  • 4 hard boil eggs
  • Peanut sauce – recipe here

Method:

  1. Remove the corn kernels and place it in a salted boiling water to cook. Drain the water and allow it to cool
  2. Skin and slice the cucumbers lengthwise. Use a teaspoon to remove the seeds
  3. Add the sliced tofu, cucumber, sweet corn and quartered boiled egg and stir through with the peanut sauce

This is such a versatile dish. It is like a Gado Gado that I had made recently. I added tofu puffs, fried tofu, bean sprouts, spinach, string beans and topped it with fried shallots.

It is just perfect for summer. You get the crunch from all the fresh vegetables, the softness from the tofu and the big flavour from the peanut sauce. The peanut sauce can be prepped the night before and tastes even better the next day.

Weekdays are always so busy with work and so I will have to keep my dishes very simple and easy to cook. At least I am sticking to the challenge and this week I am pleased that 3 bloggers have jumped onto the band wagon.
