Meatless Day Challenge #15 – Cherry tomatoes frittata

Meatless Day Challenge

I made this awhile ago to kick start the healthy challenge with Tekkie. It has been going well. But as the weather gets colder, it is getting harder and have changed the routine from mornings to evenings instead. I hope he has lost some weight and I definitely feel better and enjoying my RPM classes a lot more. There is a lot more fruits in our diet. We are still trying to find the right balance in our lives. Too much temptations and distractions!

Ingredients:

  • 150g cherry tomatoes, quartered
  • 1 small shallot, finely chopped
  • 1 clove of garlic, finely chopped
  • 4 eggs
  • 10g of butter
  • 2/3 basil leaves
  • Olive oil
  • Salt and pepper

Note that I use individual cast iron pans for this. So I shared the ingredients between the two.

Method:

  1. Preheat oven to 180C. Heat the butter and olive oil in the pan.
  2. Add shallots and garlic and cook over low heat. Add the tomatoes and increase the heat to medium and allow it simmer for about 10mins
  3. Beat the eggs, salt, pepper and basil leaves and pour into the pan. Shake the pan to spread the cooking evenly.
  4. Place it in the oven for 8 mins. Remove and serve with chunky bread or with a nice simple salad

Cherry made a delicious Chana Dahl this week. That is something I will like to be able to make and eat in the near future. After so much Easter eggs and hot cross buns, I am sure a simple and meatless dish is more than welcoming this week.

A very simple dish, though by saying so I by no means imply that it isn't any good. Looks pretty nice, actually :)

Do you often use cast iron for cooking, or was it specifically a choice for this dish?

Fritattas have to be one of the best things to whip up when you want something healthy and don't want to make a lot of effort.

I really love the pan that you used – so simple when you can do everything in one dish like that.

Your frittata looks great and it is a all time favorite of mine. Hasn't got a cute pan like yours but love to do it with my buffet casserole with which I could also leave it in the oven for the last browning : ).

I am only just getting into eggs. My family has an aversion to eggs, but I am trying to overcome that as to not miss out on one of life's little pleasures. As for the Easter eggs, we had 7 children at my house for the egg hunt and we had 80, plus 40 plastic ones! Mayhem!

So true. Temptations and distractions are really challenging including with my own eating habits. I love this dish you've made. I LOVE the pan too. And yes, I'm an egg lover as well just like you. :)

I love frittata any time os I love eggs. This dish looks delicious. I can eat it any time…mmm. Number of eggs used this Easter…didn't count…must be lots :D

Great looking frittata. These are great eaten cold for lunch the next day.

I didn't have any Easter eggs but I went through 18 eggs on the weekend cooking different things.

Oh yummyummy. I love tomato and eggs, I think the eggs sorta help balance the sometimes too acidic tomatoes. :) And tomatoes give eggs a good lift in flavour. Love the little skillet too!

I recently got some cool little pans just like this and I haven't used them yet because I'm an idiot! Why haven't I made something like this in them? Too busy stuffing my face with easter eggs, that's why.
