Meatless Day #20 – Vegetarian rice paper roll

Meatless Day Challenge

We are on a Vietnamese theme this week. Along with the smoked duck rice paper roll that was made over the weekend, I made a vegetarian rice paper roll as well. And as promised earlier in the week, there is the recipe. And I had enough to pack our lunch boxes as well!

Ingredients:

  • I packet tofu skin (used for inari sushi)
  • 2 small carrots, julienned
  • 1 cucumber, deseeded and diced
  • 4 chillies, deseeded and julienned
  • 80g mung bean noodles, cooked and drained
  • 11/2 tbsp of light soy sauce
  • 1/2 tsp of sesame oil
  • 200ml of water
  • 2tbsp of sugar
  • A bunch of coriander

Method:

  1. Boil 200ml of water, add the sugar and remove from heat to cool once all sugar is dissolved. Once it is cool, add the carrots, chillies and cucumber. Refrigerate for at least at hour. Can prepare this the day before
  2. Prepare the sauce by adding light soy sauce and sesame oil together. Cook the mung bean noodle and set aside
  3. Soak the rice paper roll in warm water. Place on a clean kitchen towel and start stacking
  4. Cut the 2 sides of the tofu skin and lay it flat on the rice paper. Pile mung bean noodles, drizzle with sauce and then topped with carrots, chilli and cucumber mix. Don’t forget the coriander for extra freshness
  5. Fold and serve with the hoisin and peanut sauce (hoisin mixed with peanut paste which I used for tang yuan)

This is so healthy and definitely a fresh change for the week. We are cutting down on carbohydrates and increasing our fresh vegetables and fruits intake. This prepares us for our weekend indulgence ;)
