International Incident Sundae Party – Banana muffin sundae

My dream of coming up with an awesome sundae is shattered. I had to bake the muffins twice and by the time, I prepped the ice cream for the photo, it turned really ugly. And after 4 shots, the whole thing fell over. I felt defeated. It was one of those days that nothing really went right in the kitchen. So please forgive me for producing a rather sub-standard contribution to the party. Sorry and hope I can redeem myself next month – Nostalgia. This is a special request by Mardi of Eat Live Travel Write with strong support from several other bloggers.

Anyway, I started with the banana muffins which needed 2 takes before I got it right. I was not sure what happened the first time but the sugar, egg and butter did not want to be friends. And even the second time, it just did not look right but I just mix everything together, chuck it into the oven and hope for the best. I was actually pleasantly surprise that it turned out really beautiful. Very moist, slightly fluffy and light. The way I like it.

And please say hello to banana flavoured cream and a nice dose of dark chocolate shavings. Just shave the chocolate using a vegetable peeler. I got the idea of spliting the muffin into 3 from the Cupcake book. I so need to bake cupcakes from that book. So many wonderful ideas! Very whimsical.

Laziness to make ice cream means that I need to think of something quick and easy. This no churn banana ice-cream can be made with just banana. I added honey and cinnamon to try and bring the whole sundae together. That was the idea anyway. Right or wrong? I think it worked.

My ice cream was starting to melt and the stack was not correctly constructed to hold weight. The whole thing was really wobbly and before I could get the right shot, the whole thing fell over :( And even though I had more to build another, the ice cream was looking very miserable and I was beaten. I don’t think I was in the right mood to do any cooking or baking that day. It is just one of those and the photo looks quite miserable as well. However, I was really pleased with the flavour. It was yummy even though there was so much banana. I think the honey, cream and the cinnamon broke up the overall banana taste. It took us about 3 seconds to finish off this banana muffin sundae. Not the prettiest but definitely made me feel better because it tasted good.

Ingredients:

Banana muffin (Adapted from martha stewart)

  • 100g of plain flour
  • 80g of brown sugar
  • 1/2tsp of baking powder
  • 1/4tsp of baking soda
  • 1/4tsp of grounded cinnamon
  • 60g of unsalted butter, melted
  • 3/4 cup of mashed bananas
  • 1 large egg
  • 1/4tsp of vanilla essence
  • Pinch of salt
  • Shavings of dark chocolate (up to you!)
  • Sprinkles – optional and your choice

Banana cream

  • 3/4 cup of mashed bananas
  • 200ml of double cream
  • 1tbsp of honey
  • 1/4tsp of ground cinnamon

  • 2 ripe and frozen bananas
  • 2tbsp of honey

Method:

Banana muffins (makes about 4 – 6 depending on tray size)

  1. Preheat oven to 170C. Line the muffin tray. Set aside
  2. Whisk flour, sugar, baking powder, baking soda and salt together until all is combine
  3. In another bowl, mix the melted butter, mashed banana, eggs and vanilla. Then create a well in the flour mixture and add this wet mixture into the well. Stir to combine all elements but do not over mix
  4. Divide the batter evenly into the muffin tray

Banana cream

  1. Whisk all the ingredients together until the cream is thicken again. Taste and add icing sugar if you want it to be sweeter

  1. Freeze sliced banana overnight
  2. Chuck frozen banana slices, honey and cinnamon in a food processor and whizz till it is creamy

Once all all the elements are ready. Make sure that muffin is completely cooled. Slice into 3 and try to it make it as even and level as you can. Layer with the banana cream and dark chocolate shavings. Spread more cream on the top layer, add the ice cream. Sprinkle dark chocolate shavings and sprinkles. Add the cherry. And voila! Banana muffin sundae.
