Easy peanut butter cookies dipped in chocolate

Time poor means that cooking and baking needs to be quick, easy but delicious. These super easy peanut butter cookies only had 4 ingredients and took no time to bake and wash up. As part of The Sweet Swap, these cookies travelled to Taryn, Gabby and Karla. They seem to travel well and packaging these cookies probably took more time than the baking time! peanut butter cookies These are now my go to cookies when I have a craving. And I make sure that there is always peanut butter at home. I love my cookies chewy, soft and moorish. There is no way that you can stop at one. It is dangerously awesome! It works great by itself and I will add a touch more salt if it is naked. peanut butter cookies Recipe adapted from Kidscooking Ingredients:

  • 1 cup sugar
  • 1 cup peanut butter
  • 1 egg
  • 1 cup dark chocolate

Method:

  1. Preheat oven to 160C
  2. With an electric mixer, beat sugar, peanut butter and egg together until smooth
  3. Form into 1-inch balls. Place on ungreased cookie sheets. Flatten cookies gently with a fork, forming a criss-cross pattern
  4. Bake 8-12 minutes until set. Remove to wire racks to cool completely
  5. Line two cookie sheets with waxed paper. Melt dark chocolate
  6. Dip cooled peanut butter cookies into melted chocolate, so the cookies are halfway covered. Place on prepared wax paper-lined cookie sheets to cool
