Baking is not one of my forte. And even when I do follow a recipe exactly, the end product is usually still not up to scratch. So this week, I thought I will stick to a no fuss muffin recipe. I found a berry muffin recipe in Women’s Weekly, Old fashioned Favourites. It looked farily simple and with very little ingredients and only 3 steps!. Sounds like a fool proof recipe.
And as always, I decided to change the recipe. A few days before muffin making day, I posted a random question on my facebook page asking Mars or Snickers. Most preferred Snickers and I do too. The caramel in Mars makes it heavier and way too sweet for my palate. I had a couple of 18g Snicker and Mars bar so I would use this instead of berries in the muffin recipe.
I made mini muffins instead of the normal sized ones. This recipe makes 24 mini ones. And I just have to say I love the colourful cups! Cuteness
Ingredients:
- 190g self-raising flour
- 45g cold butter, chopped
- 110g castor sugar
- 155ml buttermilk
- 1 small egg, lightly beaten
- Snicker, Mars, Twirl & Cherry Ripe 18g bars
Method:
- Preheat oven 160C fan-forced oven. Place pretty mini cups into muffin tray
- Sift flour into a large bowl. Rub in butter. Stir in sugar, buttermilk and egg. Do not over mix. Doesn’t matter if it is still lumpy. Spoon mixture into muffin cups
- Drop bits of naughty chocolate into each mixture. Bake for 20mins. Stand for 5 mins and then turn out on wire rack to cool
The original recipe was for 12 big muffins. I halved the portions for my mini muffins. And in that process, I mis-measured the amount of sugar. The muffins was still pretty moist but lack sweetness. The Snickers and Mars were in the first batch of muffins that I made. Mister and I did not really like it. Maybe it was the lack of sweetness in the muffin. So I changed the second batch and added Twirl and Cherry Ripe instead. They turned out pretty good. And this could be a fun party treat as well! What do you think?

I have made muffins from a box before but there’s something just not quite right about it. It doesn’t seem to save any time anyway, I don’t think, as you still have to mix all the wet stuff through. Fair better to “cheat” by just going and buying some muffins!
