As much as I approve and love changes as it makes life much more interesting and challenging, I also hate it as it can make life depressing and stressful. In the last couple of months, I have been feeling pretty low. It probably does not seem so and many of my friends aren’t aware of the bad moments. I tend to keep a lot of emotions to myself and only express them to Mister. So life is not too great at the moment.
So why do I choose to tell it to the world now? I need an outlet and this is after all, my diary. A place where I can come back to and reflect. Details may come later but for now, this is all I have to say.
I made these chocolatey rocky road to celebrate new beginnings. I made a large batch to share with some friends and colleagues. And then I kept many for myself to help pull me through the dark moments. This recipe is taken from Jamie’s America. I love the simplicity. I love how you can pick the topping of your choice. And I love chocolate.
I used Lindt Couverture 70% dark Ecuador.
Rocky Road toppings! Made me smile
After a lot of chopping and de-shelling of nuts and adding a lot of melted chocolate.
I highly recommend dried figs and cranberries. So so GOOD!
I have too much topping and have cut down a fair bit in the recipe but you can adjust as you wish! Every bite is a surprise and always something different. The sweetness is from the dried fruits. The slight bitterness from the dark chocolate. And the crunch comes from the nuts. This makes me happy.
So what makes you happy?[amd-recipeseo-recipe:4]
