Cookbook Challenge (Celebration) – Chocolate Rocky Road

cookbook challengeAs much as I approve and love changes as it makes life much more interesting and challenging, I also hate it as it can make life depressing and stressful. In the last couple of months, I have been feeling pretty low. It probably does not seem so and many of my friends aren’t aware of the bad moments. I tend to keep a lot of emotions to myself and only express them to Mister. So life is not too great at the moment.

So why do I choose to tell it to the world now? I need an outlet and this is after all, my diary. A place where I can come back to and reflect. Details may come later but for now, this is all I have to say.

I made these chocolatey rocky road to celebrate new beginnings. I made a large batch to share with some friends and colleagues. And then I kept many for myself to help pull me through the dark moments. This recipe is taken from Jamie’s America. I love the simplicity. I love how you can pick the topping of your choice. And I love chocolate.

I used Lindt Couverture 70% dark Ecuador.

I highly recommend dried figs and cranberries. So so GOOD!

I have too much topping and have cut down a fair bit in the recipe but you can adjust as you wish! Every bite is a surprise and always something different. The sweetness is from the dried fruits. The slight bitterness from the dark chocolate. And the crunch comes from the nuts. This makes me happy.
