Simple and easy chorizo meatballs anyone?
I saw meatballs on my instagram feed. That was enough for me to chuck on my jumper and headed out to my local butcher to get some chorizo and a bottle of Peter Watson puttanesca sauce. I was too lazy to make anything from scratch that weekend.
This is one of the easiest way to make meatballs that tastes good. Get some chorizo or type of sausages that you love. Remove the filling from the casing.
I happen to have some leftover Fontina in the refrigerator.
I stuffed them into the chorizo meatballs.
This is not exactly a recipe. There is no measurements. I pan fried the meatballs with olive oil until it is brown on both sides. And then I added the puttanesca sauce and mix in another 1/2 a bottle of water. The meatballs are allowed to simmer in very low heat in the sauce. Do not cover.
In the meantime, I made some super cheesy polenta. I cooked the polenta with milk. And then I added the cheeses – Fontina and Gorgonzola. Taste and season accordingly. It is that simple. This is the lazy but delicious way to make meatballs that comes with a cheesy surprise.
