chicken, chorizo & quail egg pie

The cold weather has started to kick in and comfort food seems to be the answer to warm our bellies. I had heaps of fun creating and eating this dish. Perfect with a glass of white.

Ingredients:

  • Chicken breast
  • Chorizo
  • Peas
  • Quail eggs
  • Potatoes
  • Onion
  • Fresh thyme (from the garden)
  • Spinach
  • Nutmeg
  • Butter
  • Flour
  • Milk
  • White wine
  • Puff pastry

Method:

  1. Poach the chicken breast in water (use chicken stock if you have any) and thyme
  2. Cube the potato till it is almost soft
  3. Boil the quail eggs till it is cooked. Shell them and put it aside.
  4. Preheat oven at 180°C
  5. Saute the chopped onion & chorizo first. Add the peas & potato cubes. Add the chopped chicken breast and thyme. Season well.
  6. Scoop the mixture into ramekins. Add the quail eggs & white sauce. Grate some nutmeg on top of the mixture.
  7. Cover the ramekins with puff pastry. Egg wash the puff pastry.
  8. Place the ramekins in the oven for 20 – 25 mins (till puff pastry is brown)
  9. Serve with some green/tomato salad on the side

@jeroxie i made it with a shallow short crust base and puff ontop, ontop of potato duaphinaise and with asparagus and green beans. Delish!

Very comforting. I like quail eggs but do not cook with them so often…
