I love matcha. Besides making matcha tea, it is not an ingredient that I have worked before. Matcha is one of my favourite ice-cream flavour. I have green tea almost everyday at work. And I still salivate when I think about the piece of matcha cotton soft cheesecake that I had 2 years ago in Singapore. And of course reading all the matcha recipes from Catty's blog is enough to send me MATCHA MAD!

One could never really tire of kimchi. It is one of those little dishes that the more you eat, you more you want to eat it. Last week, Mister made a lot of kimchi and due to its fiery nature; many friends were reluctant to set their tongues and tummies on fire.

This recipe depends on the extent of your chilli tolerance. Please find the recipe for the gyoza dough here. It is so easy. There is a high tolerance for mistakes. Too wet, add more flour. Too dry, slowly add water into the dough. Please remember to work the the dough before making a decision for adding either more flour or water. Your hands are the best tool. I will advise against using any kitchen gadgets. The dough is ready when it feels soft and it is not sticky.

It is home alone with Tekkie. Mister is still travelling around in Tasmania till the end of the week so I will need to prepare meals for myself only. There was nothing very much in the refrigerator and I wanted to wait for Mister to be back here before going through all the Tasmanian goodies. When I posted the question of what to cook on twitter, there were many suggestions like veal schnitzel, scallopini, Japanese curry and even instant noodles!

I was going to make veal schnitzel but changed my mind once I got home. I need packed lunch and dinner for one other night so decided to make Japanese veal curry instead. There are some missing ingredients like onions and fresh ginger. I missed out the onions and used ginger powder instead. Please use fresh ginger if you can and also add onions for more flavour.

Menya was our first stop. It is a very small ramen shop located on the busy footpath corridor area of Melbourne Central. As the place was really tiny, the group was spilt into 2 tables. I didn't mind too much with the ramen here. @cloudcontrol was not impressed and I believed he gave this place a low score. I had the Menya ramen. I gave it top marks for toppings. I thought it was good value for money at $10.90 and we were given a prawn, a scallop, crab sticks, cuttlefish, an egg and a couple of pieces of chasu.

For the month of March 2010 and in support of the official Melbourne Food and Wine Festival , Beer DeLuxe, at Federation Square, will showcase Japanese culture, beers and food as part of the Shinobi Japanese Secret Beer Garden. Just in case you are wondering, Shinobi means Ninja in Japanese. Also in support of L'Oreal Melbourne Fashion Festival and promotion of young creative talent, this secret garden is especially designed by Tokyo-born and Melbourne-based graphic designer, Nami Kano and University of Melbourne Master’s of Architecture student, Olivia Fielding.

I was thrilled to receive an invite from Beer Deluxe to the garden and had a taste of some of the Japanese offerings that is served here for a short time only. I had been to Beer Deluxe a couple of times before after work when I used to work in the CBD. They have a big repertoire of beers from around the world and I believe about 8 - 10 different beers on tap. And I was totally surprised how the outdoor area facing Flinders Street has been transformed. It is such a pity that this set up will be taken down early April as it's a great outdoor area for beer lovers.

Hello fellow friends,

In my earlier post about 'The search of the best tonkotsu ramen in Melbourne', it did conclude and mentioned that a few Melbourne food bloggers and myself have decided to embark on a one day ramen adventure. After many email exchanges, we have concluded on a rating system and its criteria.

 1. Broth
 2. Noodle
 3. Toppings

A call to all Melbournians - Where is your favourite ramen shop?
I am not sure when Mister started his craze for Ramen, in particular, Tonkotsu. I thought long and hard and it seems that Menya Noodle Bar in Sydney is the culprit. Mister discovered this place while on a short visit up in Sydney. The next time we were up there, he insisted that we had to pay homage to this place.

Before I carry on with my rambles, let me briefly explain what tonkotsu is. It is a cloudy pork soup base. It's cloudiness comes from being cooked with crushed pork bones for hours. Hence, its porky aroma and heavy pork tastes in its broth.

With all the over indulgence during the last couple of weeks, all I wanted this week was to have more vegetables in my diet. So over the weekend, I roasted a big batch of vegetables that I had with either fish or lamb during the week. It was just with oven roasted sea salt, black pepper and a good dose of olive oil.

And look what I found? Yellow Zucchinis! Don't they look super bright and cheery?

This week's challenge proved to be more challenging in many ways. Firstly, I did not own any Japanese cookbook and hardly have any real reference at all. Secondly, looking for the garnishes was a real challenge. I wanted to do justice to the recipe and felt a little pressure to get it absolutely right.

Thirdly, weeekends are usually packed with activities and I think I had bitten off more than I could chew this time. Pamela from My Man's Belly was in Melbourne for a short visit and suggested that we catch up. Both of us discovered each other through a Food Exchange program. And it is exciting to meet a food blogger not from Australia but from LA! She is such a darling and bought us a really awesome food package.
