Lazy Sunday Series 1 – Baked avocado and eggs

Sunday breakfast at home for me is about high degree of yummy-ness and low degree of difficulty. Why will you want to slog for hours in the kitchen on a Sunday morning? Sunday morning are for lazing in bed and hoping that a coffee genie will appear to take and delivery coffee orders. By the time we get out of bed on Sundays, it always almost brunch or lunch. Lazy couple much?

This is usually me when it comes to making breakfast at home on Sundays. A very simple and delicious baked avocado and eggs. It is dead easy and can be vegetarian or go naughty with bacon or anything pork or even diced smoked salmon or trout.

This recipe is meant for 2 people or 1 very greedy person. Just cut the avocado in half. Scope out a little of the avocado to make room for the egg. What do you do with the excess avocado? EAT it! It is so tasty on its own! Also place the avocado on a crumbled foil so that it stays stable.

Prepping the avocado

Ingredients:

  • 1 avocado
  • 2 eggs
  • Salt and pepper
  • Chilli flakes (optional)
  • Olive oil
  • Toast
Method:
  1. Pre-heat oven to 200C. Cut the avocado into half. Remove the seed and scoop some flesh out from both sides to fit the egg
  2. Place the egg on crumbled foil and onto a tray. Crack the egg into the avocado. Season with salt and pepper. Pop the avocado into the oven for about 20 – 22 minutes. Just check periodically and remove once the egg is cooked
  3. Crack more salt and pepper and sprinkle some chilli flakes if you like. Drizzle some olive oil and serve with toast
Quick and easy breakfast served up with a latte on a Sunday morning. If you love your bacon, simply stick the bacon into the oven with the avocado. Just make sure you watch it or it will burn.
