Cookbook Challenge Week 6 - Christmas

I have not cooked for a larger group of people for a very long time. Since it was Mister’s birthday and the kitchen fully functional, I thought it will be a good idea to get people around for some nibbles and drinks. Acar or pickled vegetables is one of the side dishes that I made for Sunday.

This dish is suitable for the Christmas downunder. It is summery, light and refreshing. The cookbook that I used from this challenge is Step by step cooking Balinese by Heinz von Holzen. This is simple and easy recipe to follow or to tweak. You can change the spices and aromatics and add herbs. Just remember the 1:1:1 ratio of water, sugar and vinegar and the rest is up to you to be creative :)

Ingredients:

  • 500ml water
  • 500ml rice wine or white vinegar
  • 500gm sugar
  • 100gm ginger
  • 11/2 stalks of lemongrass
  • 5 medium cucumbers
  • 10 large shallots
  • 15 red chillies
  • Pinch of salt

Method:

  1. Combine water, sugar, vinegar, lemongrass, ginger and salt in a pot and boil for one minute. Stir till sugar dissolves and then leave aside for the mixture to cool completed
  2. Remove the seeds of the cucumber by using a teaspoon to scrap. Then cut them into 1/2cm slices. De-seed some chillies if you like to reduce the heat. Chop all shallots into 6 or 8 depending on the size.
  3. Once the mixture is completed cool, add all the ingredients together and mix them well
  4. Refrigerate the mixture for 24 hours before serving at room temperature

It has the colours of Christmas – green and red. It’s sweet, sour, spicy and it retains the freshness and crunchiness. I have fallen in love with acar and shall be making bottles to keep for summer consumption.
